Have I mentioned how much I love my slow cooker? If you don’t own one, then you need to click here and order one immediately. I LOVE coming home from work to a fabulous smelling kitchen and dinner already made. There are so many healthy and flavorful one pot dishes you can throw together in your slow cooker. I love my Hamilton Beach version because you can program it to cook for a certain amount of hours and then it switches to a warming setting. This recipe is spicy and hearty and full of lean protein. As you know, I struggle to get Romain to eat anything “healthy” so I spend most of my time trying to disguise healthy ingredients in flavorful meat dishes. I’m sure Romain has no idea what quinoa is even though I use this protein-packed superfood often. As long as it tastes good to him, then he could care less what he is eating. So if you also have some picky eaters in your household that could use a nutritional boost, give this recipe a try. I promise it will not disappoint.

Mexican Quinoa Chicken Chile

A hearty and healthy slow cooker dinner.
  • 1 cup quinoa, rinsed
  • 1 (14 oz) can diced Glen Muir fire roasted tomatoes with green chilies
  • 2 (16 oz) cans beans of choice (black, pinto, kidney, or white)
  • 1 (15 oz) can organic corn, rinsed & drained
  • 2½-3 cups chicken broth
  • 2-3 large chicken breasts
  • 1 jalapeno, seeded and chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp crushed red pepper
  • 2 tsp Trader Joe’s Taco seasoning
  • 1 bunch cilantro, chopped
  • 1 avocado, chopped
  • chopped cherry tomatoes for garnish

  1. Season chicken breasts with salt and pepper.
  2. Rinse quinoa thoroughly.
  3. Combine all ingredients in slow cooker and cook on low for 5-7 hours. Remove chicken and shred with two forks. Return chicken to slow cooker. Serve warm garnished with chopped avocado, tomatoes and cilantro.
