My very latest baking obsession is Nordic Ware specialty baking molds. They are extremely high quality pans that come in all kinds of cool designs. I was ecstatic when I found this Platinum Beehive Pan at Homegoods for $19.99 when it retails for $50. I will NEVER buy anything at retail price considering all of the discount stores and online options that are available nowadays. Plus, I absolutely love the hunt. I admit that I am addicted to shopping, but at least i know I’m getting a great deal. I am on a mission to scour the aisles of Homegoods, Marshalls and TJ Maxx until I acquire a hefty collection of these fabulous high quality Nordic Ware molds. Lucky for me, I know that Romain doesn’t read my blog so as long as I find really great hiding spots, he’ll never discover my intentions.
This particular mold makes any cake or quick bread a little extra special. This recipe actually came with the pan and I thought a honey cake could not be any more fitting for a beehive mold. The texture is similar to a pound cake with just the right touch of honey and lemon. I highly recommend purchasing King Arthur’s Fiori di Sicilia extract to highlight the citrus flavors of this recipe. I first tried this recipe with cake flour and almond milk and while the flavor was great, I found it a bit to dry for my liking. The cake featured in these photos was actually a Mother’s Day cake for one of Romain’s colleagues. I wanted to ensure the texture was perfect so I switched to all purpose flour and buttermilk….success!! Due to the depth of the pan, this cake does take quite some time to bake so make sure it’s fully cooked through before you remove it from the oven. I imagine not everyone owns a beehive pan, but this recipe would also be great as a bundt. Enjoy!
Honey Lemon Beehive Cake

A deliciously moist citrus and honey cake that would pair perfectly with a cup of tea. Decorate the bees with royal icing for a little extra pizazz.
  • 2¾ cups all purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 1 cup (2 sticks) butter, softened
  • 1⅓ cups sugar
  • ⅓ cup honey
  • 2 tbsp King Arthur cake enhancer (optional)
  • 4 eggs, room temperature
  • ½ tsp almond extract
  • 1 teaspoon Fiori di Sicilia
  • zest of 1 lemon
  • 2 tbsp lemon juice
  • ¾ cup buttermilk
Buttercream Frosting
  • 1½ cups powdered sugar
  • ⅓ cup butter, softened
  • ¼ tsp vanilla
Honey Icing
  • 1½ cups powdered sugar
  • 1 tbsp honey
  • 1-3 tbsp milk
Royal Icing
  • 1 tbsp meringue powder
  • 1½ cups powdered sugar
  • 2 tbsp water

  1. Heat oven to 300 degrees F. Spray Nordic Ware Beehive pan with cooking spray.
  2. Sift together cake flour, baking powder, and salt; set aside. Stir in lemon zest.
  3. In the bowl of your standmixer, beat butter, sugar, honey and cake enhancer until smooth. Add eggs one at a time. Stir in extracts and lemon juice. Slowly beat in flour mixture and milk alternating between the two.
  4. Divide the batter evenly between two pan halves. Gently rap the pan against countertop to eliminate air bubbles.
  5. Bake for 55-60 minutes until toothpick comes out clean.
  6. Cool for 15 minutes on countertop and remove from pan. Use a bread knife to even out the inner sides of the beehive.
  7. Beat together butter, powdered sugar and vanilla in standmixer until smooth and creamy.
  8. When cooled completely, attach the two halves with the buttercream frosting.
  9. For the honey icing, stir ingredients together in a bowl until a pourable consistency is achieved. Drizzle over the top of the cake, letting it run down the sides and be sure to cover the side seams.
  10. For the royal icing, beat ingredients together in standmixer with whisk attachment until medium peaks form. Divide the frosting into 3 parts and add black and yellow food coloring. Pipe the body and head of bees with tip # 3, the yellow stripes with tip #1 and the white wings with #104 flower tip. Use a toothpick to manipulate the frosting as desired.
