If you are a sucker for sweet and salty combinations like me, then you have to try these brownies! I honestly cannot remember why I decided to make these other than the fact that I had an open bag of pretzels and I was craving something chocolatey. I used my signature brownie recipe, but you can replace it with your favorite recipe or even a box mix (I won’t judge too much). The key to these brownies is the buttery pretzel crust paired with the sweet white chocolate and salty peanuts. I would highly recommend sharing these brownies with a crowd because you could do some serious damage with a pan of these if you’re all alone. Trust me, I’ve been there.

Pretzel Brownies with White Chocolate Ganache

Pure sweet and salty decadence!
Ingredients
  • 3 cups crushed pretzels
  • ¾ cup butter, melted
  • 3 tablespoons sugar
  • 1 stick (1/2 cup) Butter
  • 8 oz Bittersweet or Semisweet Chocolate (I used Ghiradelli Morsels)
  • 2 eggs
  • ½ cup applesauce
  • ½ cup canola oil
  • 1 tsp flax seed meal simmered in 3 tbsp water
  • (you can replace the applesauce and flax seed with 2 more eggs)
  • ½ teaspoon Salt
  • ¼ tsp baking powder
  • 1 cup Sugar
  • 1 cup packed Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 1 cup All-Purpose Flour
  • 2 cups white chocolate chips
  • ⅓ cup heavy cream, warmed
  • ½ cup crushed pretzels
  • ¼ cup dry roasted peanuts, chopped

Instructions
  1. Preheat oven to 350°. Prepare 13×9 inch pan with cooking spray.
  2. Combine the crushed pretzels, butter and sugar and press into pan. Bake for 6-8 minutes. Let cool.
  3. For the brownies, gently melt butter and chocolate together in a glass bowl in the microwave or over a pot of simmering water. In a separate bowl whisk together eggs, oil, flax seed mixture, applesauce, salt, baking powder, sugars and vanilla.
  4. Stir chocolate mixture into egg mixture with a cake spatula, and then add sifted flour. Stir just until combined.
  5. Pour over pretzel crust and bake for another 25-30 minutes or until a toothpick comes out clean. Let the brownies cool completely.
  6. Melt the white chocolate chips in a glass bowl in the microwave in 30 second increments until you are able to stir it smooth. Mix in warmed cream. Pour ganache over brownies and sprinkle with pretzels and peanuts. Refrigerate for at least an hour until ganache has set. Cut into 24 bars and enjoy!
