• 1 stick (1/2 cup) Butter
  • 8 oz Bittersweet or Semisweet Chocolate (I used Ghiradelli Morsels)
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup canola oil
  • 1 tsp flax seed meal simmered in 3 tbsp water
  • (you can replace the applesauce and flax seed with 2 more eggs)
  • 1/2 teaspoon Salt
  • 1/4 tsp baking powder
  • 1 cup Sugar
  • 1 cup packed Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 1 cup All-Purpose Flour
  • Topping:
  • 2 cups Mini Marshmallows
  • 1 cup Chopped Nuts
  • 1/2 cup Mini Chocolate Chips
  • (I used Sprout's peanut trail mix which included peanuts, mini peanut butter cups, chocolate covered peanuts, and mini chocolate chip)
  • 1/2 cup Caramel (warm enough to drizzle) (Mrs. Richardson's)

These brownies are absolutely phenomenal. I don’t even have words to describe how good these really are. Rich chocolately brownies, roasted peanuts, mini chocolate peanut butter cups, and melted marshmallows all in one dessert? Who wouldn’t love these? Even my boyfriend loved them. Unfortunately, I now know he’s still allergic to peanuts. We thought he had outgrown the allergy, but I guess it’s only in very small doses. Thank God he only took one bite. Don’t worry he’s okay after taking some medicine, he’s just convinced I was trying to kill him. I apologize in advance to all of you out there that have a nut allergy, I know it’s not easy! If you leave out the nuts, this recipe will still be out of this world.

I actually came across these Rocky Road Brownies when I was watching The Chew on ABC. Although I did make a few alterations, I have to give full credit to Carla Hall. The original recipe calls for 4 eggs, but since I only had 2 eggs, I had to make some substitutions. I also wanted to cut back on the saturated fat so instead of 2 sticks of butter, I used one stick + 5 tablespoons of canola oil. These were so good that I kept picking at them even after I had eaten a large brownie sundae. Once you take a bite of these sinful treats, it’s really difficult to walk away.

I topped my brownies with this heavenly peanut trail mix I discovered at Sprouts with peanuts, mini peanut butter cups, chocolate covered peanuts, and mini chocolate chips. YUM! If you don’t have a Sprouts, you can just use chopped nuts of your choice and mini chocolate chips.


Preheat oven to 350°. Prepare half sheet pan with cooking spray, parchment paper and more cooking spray. Gently melt butter and chocolate together in a glass bowl in the microwave or over a pot of simmering water. In a separate bowl whisk together eggs, oil, flax seed mixture, applesauce, salt, baking powder, sugars and vanilla.

Stir chocolate mixture into egg mixture with a cake spatula, and then add sifted flour. Stir just until combined.



Spread mixture evenly into a prepared half sheet pan. Bake for 20 minutes or until a toothpick comes out somewhat clean.

Sprinkle the nut mixture and mini marshmallows over warm brownies and drizzle with caramel.

Bake for about 5 more minutes until the marshmallows have melted over the top of the brownies.

Let them cool before consuming. These are extremely messy to cut since the marshmallow sticks to the knife. If you have a tip for avoiding this problem, I would love to hear it. I might actually try baking the marshmallows into the brownies next time. Despite the mess, this is one of the best things I’ve ever ate. Top it off with frozen yogurt or vanilla ice cream and I guarantee an out-of-body experience. Enjoy!
