• 1 package Dr. Oetker's vanilla pudding mix
  • 2 cups skim milk
  • 1 box Betty Crocker Angel Food Cake
  • 1 10 oz. package of frozen raspberries
  • 1 box of fresh strawberries
  • shredded coconut (optional)
  • 1 container of truwhip
  • Pretty serving glasses

As I was browsing Pinterest to look for some delectable treats, I came across a raspberry mousse parfait recipe and it suddenly occurred to me that this would be perfect for Valentine’s Day! I was planning on making the exact recipe, but then I thought about how I could make it my own. I knew I wanted to use red fruit in my parfait in the name of Valentine’s Day (my boyfriend also LOVES any type of berry) and I wanted to incorporate pudding, angel food cake, and a whipped topping. Now as you know, I am not a big fan of processed food items, but I didn’t want to make everything from scratch so this was quite a challenge. I did a little bit of research and found that Dr. Oetkers makes a packaged organic pudding mix., which I found at whole foods. Although I used to eat  JELLO instant pudding all the time (especially since they have sugarfree/fat free), I am really trying to eliminate these unidentifiable chemicals from my body. I will warn you that the Dr. Oetkers version is not as creamy as your average boxed pudding so you have to work with it a bit. If you’re at all skeptical, you can definitely substitute JELLO instant pudding mix. I usually bake my cakes from scratch, but angel food cakes call for 12 egg whites, which is a waste of time and money if the cake is being used as an ingredient. Normally I avoid boxed cake mixes because they contain hydrogenated oils (trans fat – contributes to heart disease), but the Betty Crocker Angel Food cake mix was trans fat free and ultimately the only mix I could find (Target had the cheapest price). The most difficult product to find was the whipped topping. Cool Whip is of course perfectly fine, but once again it is tainted with hydrogenated oils. So I looked online and came across a product called Truwhip, which is 100% natural. I went to several supermarkets before I found this product for $3.99 at Whole Foods. It is obviously more expensive than Cool Whip, but the site offers a 55 cents off coupon and it tastes just as good, if not better.


Parfait ingredients



Prepare the pudding according to the directions on the box. I used the microwave preparation. Let cool in the refrigerator

Prepare the cake according to directions on the back. You could also make the cake from scratch or buy an already prepared cake. Let cool.

To prepare the raspberry coulis: combine raspberries, 2 tbsps. cranberry juice or orange juice, tbsp. cornstarch, and sugar to taste (I used two packets of Stevia in the Raw). Let the ingredients simmer in a medium sauce pan until it thickens, about 10 minutes. Use a strainer to remove the seeds from the raspberry sauce. Refrigerate.

Wash and slice strawberries into small pieces.

Dice or tear apart cake into small pieces.

Beat some Truwhip into the pudding to restore its creamy texture.

Create beautiful layered desserts in clear rocks or martini glasses. I layered as follows: pudding, cake, strawberries drizzled with raspberry coulis, Truwhip, cake, strawberries with coulis, pudding, dollop of Truwhip. Sprinkle the top with coconut and use a whole strawberry as garnish. Voila!! You have a gorgeous dessert to impress your Valentine.

There is also a Target coupon online for $1.50 off two bags of Dove chocolates. Definitely worth it in the name of Valentine’s Day!
